a new recipe = a new favorite

From their 'Peanut Butter-Chocolate Chunk Bars' to their 'Chunky Chocolate-Covered Coconut Candy Cookies', this is my go-to for new yummy baking recipes that will please all....especially myself. This is probably my favorite cook book to flip through and dream about what I'll make next. The photos themselves are delicious (I'm a sucker for a cook book with really good pictures).

Yesterday we made a new recipe and it was delightful.
Home On The Range Cookies
2 cups bleached all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
1/2 pound unsalted butter, softened
1 3/4 cups firmly packed light brown sugar
1/4 cup granulated sugar
2 large eggs
1 tablespoon vanilla extract
2 cups "quick cooking" rolled oats
2 1/2 cups semisweet chocolate chips
1 2/3 cups sweetened flaked coconut
3/4 cup chopped walnuts (optional...we opted for pecans)
bake 350 degrees 13-14 minutes....don't over bake.

They make a yummy breakfast, lunch or dinner. This was my breakfast this morning (among other things).

I have a recipe pretty similar. They are called Ranger Cookies. No Chocolate Chips, but you use Corn Flakes instead. Very Delish!! How's HaVie?? Are you done with 'all day sickness'?
